Several weeks ago I found myself with some time to kill while my daughter was taking her weekly guitar/vocal lesson and so I walked over to the other end of the shopping center to the Home Goods store. I made my way to the Kitchen Department and in no time was looking over their collection of knives.  At first I didn't see anything new, just their usual assortment of medium to high quality knives at excellent prices.  But I didn't see anything that I needed until I came upon the **Palm Restaurant 6 inch Cook's Knife.  **I have to admit, I liked this knife right away. **Palm Restaurant 6 inch Cook's Knife** This knife is basically a Chef's knife scaled down to 6 inches.  It has a heavy forged ice hardened stainless steel blade with a generous bolster for added safety while cutting and chopping.  The handle is a well designed ergonomic soft grip handle that ends with a hard stainless steel cap embossed with the Palm logo.  It has both a striking look and a comfortable feel. When I first picked up the knife I thought it would be perfect for my daughter who's a 13 year-old "chef in training".  It's just the right size for someone looking to pick up knife handling skills without the need to be weilding knives larger than they need be. Needless to say I purchased it.  Once home I lost no time trying it out.  The knife has as nice a feel in your hand as it has an appearance pleasing to the eye.  The blade is heavy for it's size (good) and extremely hard and sharp (even better).  And yes, my daughter has even gotten to use it.  What surprised me was how much I enjoyed using this smaller knife.  Keep in mind, while I call this a smaller knife, we're still talking about a substantial blade that is 6" in length and 1 3/4" at its widest. It is ideally suited for chopping and slicing vegetables with considerable ease.  After several weeks of use, the blade remains extremely sharp and the knife has been repeatedly machine washed without developing a speck of rust. **My Viewpoint** The **Palm Restaurant 6 inch Cook's Knife **is a very modestly priced knife that has the feel and performance of much more expensive knives.  Just how good?  Well this experienced cook has returned to Home Goods and purchased a few more Palm Restaurant Knives including an 8" Chef's Knife, a 3.5" and 5" Santokus and a 7" Nakiri knife.  Reviews to follow. For Chefs-in-training or just to have in your collection, the **Palm Restaurant 6 inch Cook's Knife **is a good choice. Rudi
