Very good.

I received two Global Chefs Knives as gifts. Due to the price there is NO WAY I would buy them for myself. But I'm very grateful for the person who bought them for me as a gift. These knives are SO good. I use them constantly; my other knives are just hidden away. These are sharp and stay sharp. They are durable and lightweight. They are just awesome! These knives are lightweight. I expected them to be heavier and thought because they were so light they were going to be poor quality. I was wrong. Due to their light weight they make it easier to chop up food without getting a tired wrist. Even though they are light they are extremely durable. I've had the two Global Chefs Knives for 3 years and they are still just as good as when I got them. They haven't became flimsy and have only needed sharpened a few times. They do not rust at all, like some other knives. They are just really durable! Like I said, I received these as gifts. I would never ever pay that much for a knife. I do not have that type of money laying around. If you have the funds, GET THESE KNIVES. They are lightweight, durable, and cut extremely well.

Best in small and medium sized hands

The Global knives are made by a Japanese company that specializes in, essentially, recreating samurai swords on a smaller scale: kitchen knives. They use CrMoVa steel which is slightly harder than the typical "best" German and Swiss knives like Wusthof. The blades on GLOBALs are also ground differently--narrower. They can get away with this because the blades are so hard. In fact, you will need a ceramic sharpener to effectively sharpen GLOBAL knives. The CrMoVa makes the knives more rust-proof AND hard compared to regular stainless steel, but because of the high carbon content, they will still rust if you run them through the dishwasher or don't wipe them dry immediately after use. The knives are not forged, but sintered, and the handles are dimpled metal pieces that are hollow. This makes for a very light knife. However, people with big hands won't like it as much because there is less material to grip onto, and the weight is so light. Light weight does give you more control over where to cut, though. Lastly, and most importantly, these knives are very sharp. You can cut hanging newspapers with them!

sharp sharp sharp! and they last forever!

I have had experience with all the high-end german knives in the past. I bought myself a global chefs knife, and I was blown away. One thing that really differentiates japanese knives from german knives is the weight and balance. I find the global knives to light and very well balanced. No more sore wrists! yay! These featherweights are no less sharp and durable. The shape of the knife is great too. It has dimples on the blade to avoid suction when cutting gummy things like cheese.  Beware, these knives are very very pricey. But, they are somewhat comparable in price to the big names like wusthof and henckel. In my experience (as a amateurish chef), I find I only need a chefs knife and a smaller veggie/slicing knife to do all my cooking prep. So, I find that I dont need the entire set.  I have had my 2 knives for several years now. I have had to sharpen a few times to get it back to their original sharpness. There is no staining on the metal (which is quite common with lesser brands using sub-par metals)

great product but pricey

my husband bought global chef knives about 4 years ago.  they are an awesome addition to our kitchen and i make sure to show off their clean, modern design by displaying them on my countertop. you can cut anything with ease and they are definitely professional quality.  but professional quality comes with a price.  if you are budget conscious and dont have a real need for a professional knive set, then this product is not for you.  but if you are really into cooking and want to splurge on a great professional product, then it is definitely worth spending the extra money.

I love global knives.  They absolutely cut like butter.  I love peeling, dicing, slicing, filleting.  Global cutlery are from Japan and are a lot lighter than the Euro style knives.  The handles are a lot smaller than other brands which are perfect for me.  The blades are all stainless and the edges are fashioned in a way that make cutting.  I'm in the process of collecting the 9 piece set since it's a little to hefty to get all at once. I am really loving the 3.5 inch pairing knife for slicing and dicing fruits.  It peels so well.  There is something very therapeutic about peeling an apple with a knife, especially when it's a global one at that.     The dotted handles while they make global knives look distinctly unique, also give the handle a good grip so that the stainless doesn't slip out of my hands.  I love the fact that they are so lightweight that my arm doesnt start cramping up especially when I cook large meals and have to chop through a bunch of different vegetables, meats, etc.  I love global!!!!

Global Knifes are the perfect knifes for people with smaller hands, or less strength, or for someone who just feels that weilding those big heavy german knifes if way unsafe.  These knives stay sharp for a long time, are perfectly weighted for the perfect chopping, cutting, slicing, decorating cooking experience.
