The Breville BBM800XL Custom Loaf Bread Maker is a great bread maker. I have owned several different kinds of bread makers but this is the best. It comes with both a collapsible and fixed paddle. The collapsible paddle allows the bread to cook without such a large hole in the bottom. It also has a light inside so you can view the process without opening the lid. It has a bin attached to the lid to load fruits, nuts etc...and it automatically dispenses it at the appropriate time. The screen is large and lit so it is easy to see your bread choices and it is easy to turn the knob to select your style of bread. I use it for making dough and I can pick from several dough choices including pizza. It is stainless steel so it looks great in my kitchen. The manual is large with step by step instructions including how to select custom settings for mixing and rising times. The book also has many recipes for bread, doughs, cakes and even jams. It has recipes for gluten free breads. After researching many brands of bread makers I am glad that I chose the Breville. Stability While in Use The Breville Bread Maker is heavy enough to keep it from shaking or walking while in use. Performance The custom choices for size of loaf and crust color gives you the ability to change settings according to the loaf of bread. Today you may want raisin bread which tends to come out darker but tomorrow you may want buttermilk with a light crust. Ease of Use Just put in the paddle (remember to stand it up) and add ingredients wet to dry. Add any fruits or nuts to the bin and close the lid. The large well lit screen is easy to see and the knob makes it quick to make your selections. It is easy to clean, outside wipes down with a wet cloth and the paddle and pan come apart to rinse clean. Durability The Breville Bread Maker is stainless steel which wipes clean. It is sturdy enough to take the heaviest doughs. I use it several times a week and so far it has handled everything I have put in it.
