Excellent chef's knife.

This knife is great. It's my favorite knife to use. It's light weight and the blade is durable. When it's sharp it slices through anything (even frozen chicken) but the blade has to be sharpened often. Mine went dull after 2 weeks of use. Comfort The handle doesn't wear on your hands. It's made of good material too, not cheap stuff.

When I first started really cooking about ten years ago I used the dull knives that had been sitting in my drawer for years. To be honest they sucked big time. More then once I would be trying to chop something and the knife would slip and I would say 'It's a good thing this knife isn't sharp'. As time went by I started looking for a good Chef's Knife to use and being a big fan of the show America's Test Kitchen I had heard about the Victorinox Fibrox 8-Inch Chef's Knife, the knife that they use on the show. My brother gave me one of these knives as a Christmas gift last year. I will admit I was scared the first couple of times I used this knife because this knife is really, really sharp. Not to mention I had all those close call with almost cutting myself before but since I've been using the Vicotinix knife, about half a year now, I've never once cut myself. This is by far one of the best presents I've ever recieved. Comfort The Victorinox Fibrox is quite comfortable to use and fits perfectly to your hand. So that you have a very secure hold on the knife. Performance The Victorinox is a great knife, I see know why it's so popular. This knife cuts everything like it's warm butter. It's great for dicing onion and even better there are no more tears because of how sharp the knife is. Durability I've been using this knife for about half a year almost every day and it still looks and feels brand new. Design The design is great this is a very balanced knife, the weigh distribution between the handle and blade is perfect.

Great value. Perhaps the best value for a entry-level chef's

I use this every day and have used it for tasked that I cannot risk my 240mm Hiromoto Gyuto imported straight from Japan. I generally prefer forged knives for their heft and balance, but for the price, the Victorinox does well enough and lets one focus on cooking and not worrying about his or her tools.

best rated chef knife overall by cooks illustrated for a reason

This has been rated the best overall chef's knife by Cooks Illustrated for a reason. Actually, many reasons. It's light, the metal is good (it's made of the same high-carbon, hard German metal that Wusthof and others use). The handle is fibrox, which is hard to describe.. a resin. It works. It's even dishwasher safe, but this is a high-carbon steel knife, so you will want to wipe it off after each use to make sure it does not rust. If you keep it nice and honed (and sharpened if necessary, with a ceramic sharpener or other substitute, or send it into the shop/manufacturer or professional knife sharpener), it will do its job. Slices carrots, tomatoes, potatoes, onions, etc. with ease. Don't use it to chop bone, though, you will want a cleaver or something heavier than this stamped blade for that. By the way, a bit of trivia: the company that makes Swiss army knives makes this knife. That doesn't necessarily mean anything regarding quality, but it's a fun fact.

There are knives that cost lots of money and there are knives that cost very little. I was looking for a knife that wasn't too expensive, yet I was willing to pay for good quality.
