This bacon could be cut more uniformly.

I took a trip to the new Save-A-Lot store and picked up Hickory Springs bacon. I am not sure if it is a store brand or maybe a local product, since Save-A-Lot carries a lot of both types of products. My best guess is that it is a local cut of bacon. The package does say center cut on the bacon, and I'd say that is correct. The lean to fat was good. It had a little more lean to fat versus some of the big brand names, and I prefer the lean. The taste of the bacon was fine. It was a mild bacon with no particular added flavor. Just a solid bacon flavor. Some salt but not heavy. Not really any smoke taste. The only issue I had with the Hickory Springs bacon was the slicing. The first few slices were cut irregular with thick on one side and thin on the other. This made it difficult to get it fried even. Then, the deeper in the pack I got the thicker the slices. By the time I got to the end of the pack, it really was what I would call thick sliced, and I like my bacon thin sliced. I often fry bacon, but I also use it on bacon wrapped grilled meatballs and as a weave on grilled meats like pork loin. On the grill, I need thin sliced bacon and need for it to be uniform so that it grills through at the same time as the meat. Hickory Springs bacon would be fine if they got it cut right. But, I would not be likely to buy it again, since the pack I had really was sketchy in terms of the thickness and thinness of the bacon.
