I had a very expensive cook-top for 10 years and hated every year I owned it. I splurged and bought this Viking cook-top one day and gave it to myself for Mother's Day. This is the most awesome cook top I have ever owned. The grates and burners come off for easy cleaning. But more importantly the burner tops are easy to put back on so you never have to worry that when you are ready to start cooking the flame will be uneven. Speaking of the flame, its masterful. It ignites at any on position on the dial. There is a wonderful range of flame heights and the book is correct when it says you will almost never have to cook on high. But high is helpful when you quickly want to boil something. Also I just started using the simmer side of the dial. You can adjust this dial to almost no flame at all and get the perfect simmer on any dish. The one problem I'm going to write Viking about is the black dial markings are coming off and I only clean my cook top with stainless steel products. It doesn't matter because I wouldn't trade my cook top in for any other brand.
