**Lu Raspberry /Framboise Pim's** Open a box of LU Pim's cookies and you open up a little bit of magic.These light tender busicuits have three distinct layers that add up to one delicious cookie. A smooth crisp coating of dark european chocolate tops a slightly chewy layer of intense raspberry jam filling which sits atop a lovely tender sweet cookie (or buscuit). A single bite will tell you you're eating something of quality and distinction. I happen to enjoy these chilled out of the fridge which gives the chocolate layer a nice crispness and the raspberry(frambiose) jam a deeper chew, very rich and satisfying. You can taste each layer individually as each can carry it's own just fine. These are great served with your favorite tea or simply as an afternoon treat by themselves. Lu products are not inexpensive but, that said, the quality of their ingredients is obvious, no cheap chocolate, no gluey fruit filling, no hard bland cookie,  just delectible flavors that create a delicious treat for the tastebuds. You'll find these Lu bisquits also with an orange jam filling which are equally exquisite. I've given them as hostess gifts during the holidays and they are always a very welcome surprise.
