Induction cooking is AMAZING! I have always been a gas person, but my condo does not have gas and when we remodeled the kitchen I went with induction. WOW!!! As responsive as gas and more efficient. Of course you must use ferromagnetic cookware, but that includes enameled steel, cast iron and stainless steel designed for induction cooking. I have all the above in my cooking arsenal. The coolest thing is clean up of messy items like bacon splatter, just place newspaper or a towel between your pot and cook top to catch the grease, no burner means no flame! Temperature Control As with any new technology, it takes a bit of getting used to what the cooking range is for low, medium and high, but once you get that, the controls are very consistant. Durability As with any glass cooktop, you have to be careful to not scratch the surface by dragging pots across burners. Ease of Cleaning As mentioned above, paper or towel between pan an cooktop to catch messy splatter m akes cleanup a breeze. Windex and paper towel does the rest!
