This is one of the best frozen meal enchiladas I have come across in a long time. This entree is 160 calories per serving which it serves 2. This entree is vegan, 90% organic, dairy free and contains 5 grams of protein.
Whenever I am craving enchiladas I make sure to purchase this entree.
Amy's Enchiladas are delicious!
As a vegan, I find it very difficult to eat healthily when I am in a rush. Amy's Kitchen, however, provides delicious frozen meals which are a snap to prepare and eat. These black bean and vegetable enchiladas are tasty, quick to make, and well worth the price! It's exciting to find such high quality products that suit my lifestyle. Spicy Beans and Vegetable Lunch
As a vegetarian, I have fallen in love with Amy's products and this **Amy's Enchilada with Black Beans and Vegetables** is one of my favorites. Each enchilada is a great mix of vegetables, tofu and beans with a lot of spice in a tortilla. I like that this enchilada is very flavorful and still only 180 calories. These meals are microwavable and are made in minutes. The best part is that the tortilla stays firm and doesn't get soggy with the filling. I like that they are very filling and make a great veggie lunch when paired with some fruit or a salad.

Another Great Amy's Gluten Free Product
Amy's makes some great gluten-free products, much to the delight of those of us who have dietary restrictions. Amy's Enchiladas are no exception! They're ready in just minutes, they're vegetarian (vegan), all-natural, and gluten-free! They taste great too. I love that Amy's uses organic ingredients, yet provides a quick and easy Mexican meal! (Their tamales are equally as good.) The only downside...like all Amy's products, they are a bit pricey, and they can be hard to find. I highly recommend these enchiladas and all Amy's products for those who have to live a gluten-free life.
You Won't Miss The Dairy
I picked up Amy's Enchiladas Black Bean and Vegetable from my campus convenience store. I have tried the enchildada meal by Amy's but I saw this one day and thought I would try it. It was wonderful. I love enchiladas but non-dairy pre-made ones are almost nonexistant. I've tried some from Trader Joes which I was satisfied with, but I was glad to know there was some I could buy near my college campus. Although I still enjoy the meal better, these are still delicious. They are healthy, quick, and mainly organic.

The variations on an enchilada theme seem to be many and inspired for the creative crew at Amy's Kitchen, Inc. Although I must admit that *Amy's Enchilada made with Organic Tortillas, Black Beans and Vegetables* is not my personal Amy's-related favorite, I will say that I enjoyed this dish and that it is will made. It is a vegan dish which is also non-dairy and gluten free which could be very important to some enchilada lovers out there.
A 9-1/2 oz. package delivers two enchiladas or servings, each containing 180 calories with 50 calories from fat. There are six grams total fat, half a gram saturated fat, zero each trans fat and cholesterol, 390 mg. sodium, 26 grams total carbs, three grams dietary fiber, two grams sugars, and five grams protein in addition to 8% (D.V.) Vitamin A, 10% Vitamin C, 4% Calcium, and 10% Iron in each enchilada.
These enchiladas contain no GMO's or bioengineered ingredients but there is plenty of good fresh organic stuff including: filtered water, corn tortillas, tomato puree, zucchini, tofu, black beans, yellow corn, onions, safflower oil, sweet rice flour, bell peppers, spices, tapioca flour, black olives, sea salt, garlic and green chiles.
A scoop of fresh salsa would have been a perfect topping for an *Amy's Black Bean and Vegetable Enchilada. *A frosty glass of Simply Lemonade went beautifully with this and I used the first sip to drink a toast to the crew at Amy's Kitchen!
