Hi guys.  I recently participated in an e-mail version of this and it was fun. It's a good way to try new recipes from different people all across the country.  I will submit a recipe and then tell a Viewpoints friend about this "discussion topic" and they join the coversation by adding a new recipe and telling one of their friends about it and so on...Eventually there will a whole bunch of recipes for us all to try.

Hi!  How important is it to add the soy flour?  I have never heard of soy flour before and I am not sure how readily available it is.

For this time of year here's something quick and easy:
Nachos Supreme (hubby calls it Nacho Lasagna)

Amounts of ingredients are variable depending on the amount you want to make.  one lb of meat generally makes 4-6 servings in a 9" square pan.

Tostidos scoops
1 lb ground beef
salsa
taco sauce
refried beans
cheese whiz
shredded cheese
sour cream

- Brown the hamburger and drain.  add in approx 1 cup of salsa (enough to coat all the meat.) and simmer, stirring occassionally. 
- Mix together the beans (approx 1/2 can) and cheese whiz.  Microwave to melt (1-2 minutes)
- Lay out the chips bowl side up
- Drizzle 1/2 of the bean/cheese mix over the chips, making sure each has some in it.
- pour meat over the chips evenly.  drizzle taco sauce over it.
- place another layer of chips, bowl side down
-drizzle with remaining beans/cheese
-drizzle taco sauce
-top with shredded cheese

Bake at 350 for approx 15-20 minutes untill it is bubbly.

serve with sour cream to taste

My mother makes a dessert called Chocolate Delight Pie every Thanksgiving and Christmas. It is one of my favorite desserts. Trust me if you make this pie, it will be gone in no time. 


Chocolate Delight Pie



Ingredients~

  • 1 package graham cracker crust mix
  • 8 ounces cream cheese, softened
  • 1 cup confectioners' sugar
  • 1 cup non-dairy whipped topping
  • 1 package vanilla instant pudding
  • 1 package chocolate instant pudding
  • 3 cups milk


Preparation:
Make crust according to package directions and press into the bottom of a 9 x 13 x 2-inch pan. Bake at 350 degrees just a few minutes. Mix cream cheese, sugar and whipped topping and pour over crust. Mix puddings and milk and pour over cheese layer. Dot with additional whipped topping. Chill.

Enjoy!!!

Okay, I was at a get-together yesterday and a lady had brought some crackers that were the hit of the party (seriously!). I couldn't stop eating them. They tasted so good that I asked for the recipe. I haven't tried to make them yet myself, but she said it was super easy to make. They are a bit spicy, but taste kind of like focaccia bread, only in cracker form. I don't know what they are called, but I will name them:

                                     

               Foccacia Style Soda Crackers

 

- in a Tupperware style bowl with a tight-lid

mix:

- 1 Pkg. of dry Hidden Valley Ranch Dressing mix

- 2 1/2 T. crushed red pepper flakes

- 1 1/2 cup Canola oil

- add 4 sleeves (1 whole box) soda crackers (like Saltines)

- Put lid on tight

- shake up and down, and side-to-side

- turn over every 30 minutes for the next 2 hours

- No need to bake

- No need to refrigerate

- They will stay good for 2 days

 

--- These tasted great all by themselves, but I imagine they would go well with cheese. Great to take to a pot-luck or to serve as an appetizer. ---

LOL... when I read the lady's recipe, I kind of thought the same thing. There were a few crackers that were broken in half, but most of the crackers were all still intact. I can't wait to try to make them myself, but I will take the side of caution and shake them gently ;-)

This is a great quick dessert

  

Strawberry Dessert

 

1 (1 lb) angle food cake

1 c. powdered sugar

1 (8 oz) cream cheese

1 (8 oz) cool whip

2 lb. strawberries cleaned and cut up

Strawberry Glaze to taste

 

Break up angle food cake and set aside.  In a large mixing bowl add powered sugar, cream cheese, and cool whip.    Mix until well blended.  Stir in angle food cake to mixture (you can add more or less to taste).  Spread out in a 9 X 13 dish.  Mix strawberries and glaze together and top dessert.

 

HINT:  Any fruit can be used as a substitute.

Gooey Butter Cake

 

Cake:

1  18 1/4 oz pkg yellow cake mix

1  egg

8 tbsp butter, melted

 

Preheat oven to 350 degrees

 

Combine cake mix, egg, butter and mix well with an electric mixer.  Pat the mixture into the bottom of a lightly greased baking pan.  Prepare filling.

 

Filling

1  8oz pkg cream cheese, softened

2 eggs

1 tsp vanilla

8 tblsp butter, melted

1 16oz box powdered sugar

 

In a large bowl. beat the cream cheese until smooth.  Add the eggs, vanilla and butter and beat together add the powdered sugar and mix well.  Spread over the cake batter and bake for 40 to 50 minutes.  Make sure not to over bake because the center should be a little gooey!

 

Makes 6 to 8 servings

prep time 30 mins

cooking time 40 mins

really easy to make

 

Also, you can substitue any flavor of cake mix you like!

I love this thread.

My friend just sent me this recipe for Chicken Tamale Casserole-- 300 calories per serving. She said it was delicious!!!!

Ingredients
  • 1  cup  (4 ounces) preshredded 4-cheese Mexican blend cheese, divided
  • 1/3  cup  fat-free milk
  • 1/4  cup  egg substitute
  • 1  teaspoon  ground cumin
  • 1/8  teaspoon  ground red pepper
  • 1  (14 3/4-ounce) can cream-style corn
  • 1  (8.5-ounce) box corn muffin mix (such as Martha White)
  • 1  (4-ounce) can chopped green chiles, drained
  • Cooking spray
  • 1  (10-ounce) can red enchilada sauce (such as Old El Paso)
  • 2  cups  shredded cooked chicken breast
  • 1/2  cup  fat-free sour cream
Preparation

1. Preheat oven to 400°.

2. Combine 1/4 cup cheese and next 7 ingredients (through chiles) in a large bowl, stirring just until moist. Pour mixture into a 13 x 9-inch baking dish coated with cooking spray.

3. Bake at 400° for 15 minutes or until set. Pierce entire surface liberally with a fork; pour enchilada sauce over top. Top with chicken; sprinkle with remaining 3/4 cup cheese. Bake at 400° for 15 minutes or until cheese melts. Remove from oven; let stand 5 minutes. Cut into 8 pieces; top each serving with 1 tablespoon sour cream.

Hello, These recipes are making me hungry! I have a very simple cake that is easy and delicious: Hornets Nest Cake 1 box yellow cake mix (not the pudding type) 1 small box of vanilla instant pudding 2 cups milk 1 small bag butterscotch morsels 2 cups chopped pecans Prepare the vanilla pudding as directed on the box. Add the cake mix and mix well. Pour into a greased 9x13 inch pan. Sprinkle the butterscotch morsels over the cake then top with pecans. Bake at 350 degrees for 30-35 minutes. (My oven takes a little longer.) I have made this with chocolate cake mix and chocolate pudding and semi-sweet chocolate morsels. You can make any variety you like! Lynne

Muffin Cake

 

 

1 box Betty Crocker cinnamon streusel muffin mix

½ cup apple, peeled & chopped

½ cup carrot, shredded

½ cup walnuts, chopped

¾ cup flaked coconut

¼ cup vegetable oil

2 eggs

1 (8 oz) can crushed pineapple, undrained

½ cup powdered sugar

1-2 tsp water

 

 

1) Heat oven to 400.  Grease bottom of 8x8 square pan. 

2) In a medium bowl, stir together muffin mix, apple, carrot, walnuts & coconut. 

3) In a small bowl, stir together oil, eggs & pineapple w/juice.  Mix in to muffin mixture. 

4) Spread in pan and sprinkle with streusel from muffin mix box.

5) Bake 35-40 minutes

6) In a small bowl, mix powdered sugar and water until smooth enough to drizzle.  Drizzle over warm cake.

I never would eat cakes, even as a child, because I didn't like frostings.  But about 2 years ago someone informed me that the frosting on Red Velvet Cake is made with cream cheese and I fell in love with it.  I only eat it during the Christmas holidays but I love it ;+}

 

Red Velvet Cake

Makes one 3-layer cake

Ingredients: 

1/2 cup shortening
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
1 tablespoon butter flavoring
1 full bottle red food coloring (1/2 oz)
3 tablespoons cocoa
2 1/2 cups sifted cake flour
1 cup buttermilk
1 teaspoon salt
1 tablespoon vinegar
1 teaspoon baking soda
enough cream cheese frosting to cover 3 layer cake

Preparation and baking directions:

Cream shortening, sugar, eggs and flavors.

Make a paste of cocoa and food coloring. Add to first mixture.

Alternately add flour and buttermilk and continue to mix.

In small bowl, mix baking soda and vinegar, then add to batter - blend.

Bake in three 9 inch pans for 20-25 minutes at 350° degrees.

Let cool completely.

Using your favorite cream cheese frosting, cover the top of two cakes and stack on top of each other. (I use the Betty Crocker's Rich & Creamy Cream Cheese frosting).  I guess a true chef/baker would also make the frosting from scratch.

Place third cake on top, then complete cake by frosting sides and top.

During the holidays we add a festive looking cake topper.

1 package of Kool-aid lemon-aid

add sugar to taste

we people in north Carolina love our ice tea especially in the summer months but this is treat that could be served a Christmas hot or cold.

Here's a holiday favorite I make for my family and it's a no bake recipe!!!

Bourbon Balls

2 Tblsp Powered Cocoa
1 Cup Sifted Powered Sugar
1/4 Cup Bourbon ( or substitute with rum)
2 Tblsp Light Corn Syrup
2 Cups Crushed Vanilla Wafer Cookies ( I usually buy the Nilla wafer cookies)
1 Cup Finely Chopped Pecans (optional I make some with some w/o the nuts)
Extra Powdered Sugar to roll the balls in


Sift together cocoa and powdered sugar into a bowl.  In a separate bowl combine bourbon (or rum) and corn syrup; add to cocoa mixture and stir well.

Add vanilla wafer crumbs and pecans and mix well.  Shape down into 3/4 inch balls;  and roll the ball in the additional powdered sugar to coat.  Allow to dry before serving.  Balls should be firm. 

This makes about 3 dozen balls!

Make this recipe without the alcohol for kids and they can be just plain snow balls!!

Peanut Butter Cookies

 

 

1 ¼ cup of Self Rising Flour

 

½ cup of Butter

 

½ cup of Peanut Butter

 

½ cup Brown Sugar

 

½ cup of Granular Sugar

 

1 egg

 

½ tsp of Vanilla

 

Mix all of your dry ingredients such as flour sugar's then mix all liquid butter, peanut butter, egg, vanilla together mix well.  Roll dough a tsp at a time into balls place 3 inches apart on greased cookie sheet flatten with a fork to make cris cross.  Bake at 375 degrees for 12 minutes or until golden brown and enjoy

Makes about 48 cookies

Crab Stuffed Mushrooms

 

 

1 onion, diced

2 cloves of garlic, minced

2 stalks of celery, diced

Juice of 1 lemon

8 oz. asiago cheese, finely shredded

¼-1/2 cup bread crumbs

½ cup butter

½ cup mayo

8 oz. crab

2 lbs. mushrooms

Salt, pepper, cayenne pepper

  • 1) Cut out stems of mushrooms and make a hole. Discard mushroom stems.
  • 2) Sauté onion, garlic & celery in butter until soft. Transfer to a large mixing bowl.
  • 3) Add crab, lemon juice, asiago cheese, bread crumbs and seasonings. Add mayo until binded together nicely.
  • 4) Place stuffed mushrooms on cookie sheet sprayed with Pam. Top each mushroom with asiago cheese.
  • 5) Bake in 350 degree oven for 20 minutes.

DO NOT, again I repeat DO NOT attempt to make air biscuits in my presence.  To Chrissy and R11--I love you girls but you can keep those for yourself ;+) 

I love the recipe for corn casserole.  It sounds yummy and easy to make--my kind of cooking/baking ;+)

This recipe was on a Nestle gift package I received.

Chocolate Cocoa Frosting:

  • 3/4 cup (4 envelopes) Hot Cocoa Mix (whatever flavor you want w/o marshmallows)
  • 1/3 cup hot water
  • 1/3 cup softened butter or margarine
  • 1 tsp. vanilla extract
  • 1 pound powdered sugar

Directions:

  1. Combine cocoa mix and water in large mixer bowl.
  2. Beat in butter and vanilla extract.
  3. Gradually beat in powdered sugar until smooth and creamy.
  4. Add more hot water if frosting is too thick.

Serving Size:

Two 9-inch cake layers OR one 13x9-inch cake.

  Chicken Francais

 

 

¾ cup Egg Beaters

¼ cup parmesan cheese, grated

¼ cup white wine

2 tbsp lemon juice

Salt & pepper

¼ tsp Tabasco

¼ cup parsley, chopped

4 chicken breasts

1 cup flour

Olive oil

Cooking spray

Butter

¼ cup white wine

3 garlic cloves, minced

3 tbsp lemon juice

1) Combine the first 6 ingredients together in a shallow dish.

2) Pound each chicken breast with a meat mallet to a ¼ inch thick.

  • 3) Dredge chicken in seasoned flour, then dip into the egg mixture.
  • 4) Spray skillet w/cooking spray and add olive oil. Cook chicken for about 4 minutes on each side. Remove the chicken from pan and set aside.
  • 5) Deglaze the pan with ¼ cup white wine, simmer for about 2 minutes, then add the garlic, butter, lemon juice, parsley, salt & pepper. Bring to a boil, then simmer until ready to serve. Scrape up the bits on the bottom of the pan to incorporate into the sauce.
  • 6) Pour sauce over chicken and serve over rice if desired.
