Hi guys.  I recently participated in an e-mail version of this and it was fun. It's a good way to try new recipes from different people all across the country.  I will submit a recipe and then tell a Viewpoints friend about this "discussion topic" and they join the coversation by adding a new recipe and telling one of their friends about it and so on...Eventually there will a whole bunch of recipes for us all to try.

Baked Steak Burritos

½ cup butter

1 taco seasoning packet

1 ½ lb beef sirloin, cut into strips

1 can refried beans

12 flour tortillas

3 cups cheddar cheese, shredded

3 green onions, sliced

1 (10 oz) can enchilada sauce

 

 

  • 1) Heat oven to 400. Melt butter in skillet over medium heat. Stir in taco seasoning mix. Add beef strips, cook until done.
  • 2) Heat refried beans in microwave to get soft.
  • 3) Spread each tortilla with refried beans, top with beef, cheddar and onions. Roll up and fold into a burrito. Place seam-side down in a 13 x 9 dish.
  • 4) Pour enchilada sauce over burritos. Sprinkle with cheese.
Bake uncovered about 10 minutes or until cheese is melted

Ok having just been to Kripalu and deciding once again to eat super healthfully and as close to the earth is possible this is tonight's dinner:

One can of red salmon
Bread crumbs (I can't find organic but these are only found in the health food section)
2 eggs
Believe it or not the skin and bone can and maybe even should be left.

I put the can of salmon and eggs in a bowl and mix them together. I then take as much bread crumbs as I need to hold this mix together to form a patty. I fry these with virgin olive oil on a low heat turning them. Depending on the size I can make probably 6 patties. Enjoy!

I have concocted my own recipe for Veggie Soup.  Probably it is very similar to many others out there but it really hits the spot for me.  Just in time for the cold months ahead:

Tomato Vegetable Soup

1 Cube Tomato Bouillion (by Knorr)

2 Cups Water

1 14 oz. Can Diced Tomatoes

1/2 jar Prego Sauce (any flavor but it must be SMOOTH, not Chunky Garden)

1 lb. Frozen Vegetables (Corn, sliced carrot, green beans)

1/2 cup Dehydrated Diced Onions

1 can Kidney Beans

A dash each Garlic Salt and Coarse Black Pepper

Dissolve Tomato Boullion cube in the two cups boiling water.  Add the Prego sauce, the diced tomatoes, dehydrated onions, beans, seasonings, and frozen vegetables.  Soup will be on in about 15 minutes!

This is super fast and easy and I personally love it.  I suppose you could leave the beans out, or use different seasonings, or maybe even add pieces of beef to it.  That's the fun of making home-made soup, you can do whatever you want.

Note:

Pasta is a nice addition to this but don't add cooked pasta to the soup.  Instead put a serving of pasta in each person's dish and ladle a serving of the rest of the soup mixture over it. 

One Other Thing:

Knorr's Tomato Bouillion Cubes are a product of Mexico but can be found in supermarkets in the "Ethnic" section with other Mexican foods.

Those Steak Burritos sound AWESOME!

Okay, these are really easy and soooo good. 

Chocolate Peanut-Butter No Bake Cookies

2 cups sugar

4 tablespoons cocoa

1 stick butter

1/2 cup milk

1 cup creamy peanut butter (not low fat or fat free)

1 tbsp vanilla

3 cups oatmeal

M & Ms

Waxed Paper

In a heavy saucepan bring to a boil:  sugar, cocoa, butter & milk. 

Let boil for 1 minute then add peanut butter, vanilla, and oatmeal.

On a sheet of waxed paper, drop mixture by teaspoonful.  Add one M & M to the top.  (during Christmas I use red & green M & M's, during Thanksgiving I use the brown & Orange)

Wait until they've cooled and hardened and enjoy.  You never once turned on the oven!

Everyone really likes this easy punch I made before (see review here for a picture).  It's REALLY easy and makes for a fancy dancy party drink.

  • 46oz of Hawaiin Punch (you'll have to buy it in a 2 liter)
  • 6 oz can of frozen lemonade - thawed (only use 6 oz, the whole can is too strong)
  • 32oz ginger ale (your fav brand)
  • 32oz lemon lime soda (your fav brand)
  • 16oz frozen strawberries - thawed (I use Private Selection b/c that gives it some juice as well)
  • Plenty of Ice

Instructions:

  1. Prior to the party, combine Hawaiin Punch, thawed lemonade in a punch bowl
  2. Blend the thawed strawberries just really quick - you don't want them to be a liquid completely, but you don't want big chuncks either
  3. Pour strawberries into the punch bowl, and store in the fridge until the guests arrive
  4. As soon as guests arrive, take out your punch bowl and pour in the ginger ale and lemon lime soda
  5. Add just enough ice cubes to keep chilled; add ice throughout the party whenever it seems to be almost gone.  You don't want to overload it with ice at the start, better to slowly add it
  6. Watch as your guests gulp it all up!

I had a party with 7 adults and they all loved it, even those who usually say "just water" when I offer a drink.  By the end it was more than 1/2 gone and I poured the rest into a jug for myself to drink throughout the week :)

Hi.  My husband is from West Virginia and I had never heard of no-bake cookies before.  I mentioned them to him and he got all excited.  Thanks for bringing his part of the country to the post.  Being from California, my husband and I have different tastes for things, so I am sure you are satisfying one of his cravings, thank you!

This is one of my Favorite Summer Salads:

Strawberry Greens Salad
[you'd better have the recipe handy because everyone will want a copy!]

1 large bag of spring greens or chopped romaine
1/2 cup fresh shredded Parmesan cheese
1/4 red onion-­ chopped
8 oz.­ fresh strawberries-­ sliced
1/2 bag of Heath toffee chips [in baking aisle; plain is best but the choc. ones will work too]

The Dressing
1/2 cup mayonaise
1/4 cup milk
1/8 cup white vinegar
1/3 cup sugar
1/2 tsp.­ poppy seed

Directions:

1. Mix all of the salad ingredients listed above (in order) in a large mixing bowl.
2. In a separate bowl, whip the dressing ingredients listed above with a whisk.
3. Right before serving time, add the dressing to the salad and toss well.

Pumpkin Cookies

This makes a tasty batch of cookies that are egg free and not heavy. Perfect for this time of year.

3/4 cup of honey                                          1/2 teaspoon salt

1 cup pumpkin puree                                    1 teaspoon cinnamon

1/2 cup oil                                                     1/2 teaspoon nutmeg

1 teaspoon vanilla                                         1/4 teaspoon ginger

2 cups of flour   (See "Note")                                            1 cup raisins (optional)

1/4 cup soy flour                                           1/2 cup chopped nuts (optional)

2 1/2 teaspoons baking powder

(Note: I use all purpose flour or wheat flour or mix but you can try other flours if you want to)

Preheat oven to 350 degrees.

Mix honey, pumpkin puree,oil and vanilla in a bowl.

In a separate bowl, combine dry ingredients.

Add the combined dried ingredients to the pumpkin mix.heet.

If you're using raisins and/or nuts add them to the pumpkin mix.

Oil a cookie sheet.

Drop the mix by spoonfuls onto the oiled cookie sheet.

Bake for 12 - 15 minutes.

Makes 18 -24 cookies.

Hi everyone!

Here's my contribution to the Recipe Chain.

These are so, so good, if you like dates. I add raisins to my filling as well. This recipe was given to me by a good friend from Canada. It's a favorite holiday cookie bar at my house. :)

Date Bars

Date Filling:

1 pound pitted dates, chopped
3/4 cup hot water
1/4 cup brown sugar
1 tsp. lemon juice

Date Filling: Combine dates, hot water and brown sugar together in saucepan. Cook over medium heat until dates are soft and water is absorbed. Stir in lemon juice and let cool. Meanwhile, prepare pastry.

Pastry:

1 1/2 cups flour
1 1/2 cups rolled quick oats (not instant)
1 cup brown sugar
1/8 teaspoon salt
1 cup butter or margarine

Pastry: Combine dry ingredients together in a bowl. Work in butter with 2 knives or pastry blender until pastry is crumbly.

Spread half the mixture in bottom of a greased 9" pan and pat down. Cover with date filling. Pat remaining mixture on top. Bake in 375 degrees Fahrenheit (190C) oven for 30 minutes. Cut into squares while still warm and cool in pan before serving.

And at least with the Veggie Soup, nobody ever has to call the Fire Department, haha! Gol-darn it, that fire person who showed up that day (the one with the ax) was pretty cute, now that I come to think of it -- and from what little I could see of him through all that smoke!  heh, heh!

OOh I got one! It's a very simple and fast receipe.


Peanut Butter and Jelly Sandwich. :P

Get 2 slices of bread,
Slather, squirt, drop a blob of peanut butter and then the jelly
eat it and enjoy it with a cold glass of milk.

:P lol!!!

Those Steak Burritos sound Super!

Smoked Chicken Chowder

This recipe serves: 6   Preparation time: 20 min  Cooking time: 30 min

 

Ingredients

1 slice uncooked bacon, diced

1/2 cup chopped onion

1/2 cup chopped celery

1 sprig fresh thyme

1 bay leaf

1 1/2 cups low-sodium chicken or vegetable broth

6 small red potatoes

1 pound boneless, skinless smoked chicken breasts

2 cups reduced fat (2%) milk

1 red pepper, diced

1 teaspoon chopped, fresh dill


 

Cooking Instructions

1. Put the bacon in a soup pot and heat over low heat.

2. Add the onion, celery, thyme and bay leaf, turn the heat up to medium, and cook until the vegetables are soft, about 10 minutes.

3. Dice the potatoes and add them to the soup pot with the chicken broth. Simmer until the potatoes are just tender, about 10 minutes.

4. Add the milk, peppers, chicken and dill and cook until the chicken is just cooked through.

5. Remove the thyme and bay leaf. Adjust the salt and pepper to taste.

Ok, Jo, now mix in some Montreal Steak Seasoning and then we'll have something to talk about!  BTW, try this recipe with fresh wild salmon, pulsed in a food processor for a few seconds.  Getting even closer to the earth.

So many great idea's and I will definately try the no-bake cookies. My son & I love PB & Choc.

I seldom use a receipe and when I do whip up something in the kitchen, I invariably use whatever I have on hand. I have certain staples that are essential to me and I am never without them. They can always be combined to make something fancy or simple, depending on the need.

My essentials are: 1) a bottle of good EVO (extra virgin olive oil); 2) garlic, in all it's many wonderous forms; 3) onions, I prefer red & dehydrated onion flakes; 4) a good paprika, it adds a nice smoky taste & color too; 5) red pepper or cayenne, turns up the heat and clears your nasal passages; 6) dried mushrooms, rehydrated and strained (save the liquid), they add a rich flavor to your dish; 7) wine, (red, white, marsala, sherry) to add to even the simplest of dishes to tweek the flavor. I use the small bottles of cooking wine found in your supermarket, I know the big chefs say only use wine that you would drink alone, but I prefer to do just that....drink my good wine; 8) I always have cans of crushed & petite diced tomatoes in the closet, it is amazing what you can do to create something yummy & add lycopene to your diet, all at the same time.

I love to cook, but sadly, my son is a meat & potatoes kinda guy, so my talents are sorta wasted on him.....but when I invite friends over, they are never disappointed.

This "Recipe Chain" was a great idea and I'm impressed at how carefully everyone put down their ingredients and instructions.  It's nice to think that this thread will stay on permanently and we can refer to it for future reference.  Have a nice Sunday, everyone!

Hmm...love the recipe but I have one problem.  I'm OCD so it is very important for me to have measurements ;+)  You could make it a little easier if you used GooberGrape ;+)  Now I want a sandwich!

Yummy!  I love pumpkin flavor, I'll see if my mom is willing to let me try something new this holiday (she always asks me to make Chocolate Chip cookies b/c apparantly I'm an expert at following the Nestle instructions :) )

Hummus with Lemon and Yogurt

1 clove garlic

1 can chick peas, drained

3 tbsp plain, low-fat yogurt

2 tbsp tahini

3 tsp ground cumin

2 tsp lemon juice (or to taste... I use more)

 salt/pepper to taste

 

1. Chop garlic clove in food processor.

2. Add the rest of the ingredients to processor and puree until smooth. 

I serve this with pita chips and veggies.

Kevin and I like hummus. I really want to make your recipe but you didn't say what size of canned chick peas. Is it 15 oz. or 28 oz?

Mexican Spoon Bread

 

 

16 oz can cream style corn

¾ cup milk

1/3 cup oil

2 eggs

1 cup cornmeal

½ tsp baking soda

1 tsp salt

1 can green chiles, diced

Pickled jalapenos to taste

Green Tabasco

2 cups of shredded cheddar

1) Heat oven to 400. Mix all ingredients except chiles, jalapenos and cheese.

2) Pour half the batter in a 9X9 baking dish that is sprayed with Pam. Layer chiles, jalapenos and cheese. Pour the remaining batter on top. Layer with chiles, jalapenos and cheese.

3) Bake for 45 minutes.
