Coltswold is made in a little part of Great Brittain that has been making this particular cheese for centuries. It is delicious. Lovely rich texture, superior flavor with the aged cheddar and chives. A cheese for savoring, not making into mac and cheese. Probably enjoyed more by adults than children because young palates don't usually taste the nuances of this level of complexity. This cheese would fit with a loaf of bread and a bottle of wine. Maybe a couple of grapes. Yummy as a picnic cheese. Look for it in the gourmet cheese section of your grocery store.
