Great with spicy sausage

My wife makes this for me without the added oil or margarine, and usually puts in 1/2 pound of cooked, crumbled, and well-drained spicy sausage such as Hot Emge.  Sometimes she will throw in some frozen shrimp instead which we often have on hand for quick things.  I particularly like it will the spicy sausage, but it is higher in fat that way, while the shrimp is lower in fat, and high in cholesterol.  It can be made healthier by just eating the rice, or adding beans or chicken breast.  It satisfies my yen for something spicy without being horrible for me.
