Southerners love some ribs, but they're sure big and messy to toss on the grill or smoker. If you've wrestled a rack, you'll know just what I'm talking about.
There are all kinds of directions for curling ribs. Trust me. Ribs do not want to curl until they are cooked and tender. It's about like me trying to do a full back bend these days. Perhaps I could. Probably I shouldn't.
Far easier is to buy a Weber rib rack or two.
The meat sits up sideways on the rib rack. Not only does it take up less room, it also cooks more even. Just stick that rack on the grill and slide the ribs in. That's it. Well, you have to pull them off at the end which can be messy, everyone knows ribs are messy. Buy lots of paper towels too.
One rib rack will hold four meaty babyback ribs. That's enough to feed 8 hungry guys, so that's enough for most folks. It will hold thicker cuts of ribs, but the babybacks are real tender, and that's what we usually buy.
It does take quite a bit of work to do ribs, so two racks would be a good idea too. Ribs freeze really well. In fact, the flavors settle in, so warmed up ribs are just as good as the ones right off the smoker.
Now, cleaning the rib racks is kind of a challenge. They are kind of big - for my sink anyway. They do clean up fine with Dawn dishwashing liquid if you clean them as soon as they cool. If you get lazy and leave them overnight, a little oven cleaner will do the trick.
I think Weber rib racks run around $15. They last forever - or for a really long time here anyway. I was happy with the investment and sure thrilled with the way the ribs come out. Man, those are some good ribs cooked sideways with the flavors melting all the way through.
