I love grilling food. We have this Weber on our back porch with a direct gas line feed. I had our local Mr Handyman build a wooden encasement for it and we tiled the surface. It looks really nice. See the attached picture.
This grill has three rows of gas controls which enables me in some cases, to have very low direct heat and use the front and back burners to create a high heat without the direct flame.
I will occasionally have some problems with burning or charring, but I have gotten better over the years at figuring out little tricks that prevent the worst of it. I have probably five different grilling books and at some point should actually read them ">)
I have made tenderloins, steaks, hot dogs, hamburgers, grilled chicken, grilled salmon etc and they all work great. We grill lots of vegetables and even some fruit. (A grilled peach sliced in half on the grill for just a few minutes is delicious)
My signature dish I make with this grill is the Cedar Planked Salmon. We get our Salmon from Dirk's Fish in Chicago. We buy the cedar boards at Whole Foods or Dirk's. Soak the cedar for for 30 minutes, lay the salmon on it and use a very thick teriayki marinade/sauce that will stay on top of the fish. It takes about 20 minutes on medium direct. The board burns and smokes a little, but never all the way through. The flavor is amazing and it takes from start to finish less than 30 minutes. The marinade glazes onto the fish and really makes it shine.
