Stouffer's Lean Cuisine Chicken Enchilada Suiza Frozen Food 9oz — 

I had to look twice at the microwave directions for the preparation of this product -- instead of heating on top power for four or five minutes, you're supposed to use 50% power for eight minutes!  So it was that I got to enjoy something I don't experience often -- the spicy aroma of something delicious baking in my kitchen.  Before another minute had passed while I gave it a chance to cool down a little, I was hunkered down and eagerly waiting for my first bite.  It may be that all of this made Lean Cuisine Chicken Enchilada Suiza taste even better than it really did, which is just about as good as something could taste under any circumstances.  The dish is very reminiscent of the great offerings from Amy's Kitchen but I must confess that (reprobate that I am) I enjoy the added touch of a meat filling and sour cream sauce for the enchilada.  The accompanying side dish of Mexican rice came up to my standards also.

STATS:

Each package contains one serving consisting of 270 calories with 40 calories from fat.  There are four and a half grams total fat, two grams saturated fat, zero grams trans fat, one gram polyunsaturated fat, one and a half grams monounsaturated fat, 20 mg. cholesterol, 510 mg. sodium, 350 mg. potassium, 47 grams total carbs, three grams dietary fiber, seven grams sugars, and ten grams protein.  Vitamins and minerals include 4% (D.V.) each of Vitamin A, Vitamin C, and Iron, and 15% Calcium.

TASTE TIP:

Lean Cuisine Chicken Enchilada Suiza is delicious enough to stand on its own but I'm betting that a little fresh salsa would add to the fun without compromising the nutritional integrity of the dish.

Oh yah, some things just have to be cooked the old-fashioned way. Every now and then I make a pork roast and also a pretty big bird during the holidays.

I still prefer long baking times, especially on chicken or turkey to get that crispy skin...;)

You know, my aunt and I were talking the other day about how most people are less patient about cooking times than in the old days. Remember when it wasn't unusual to have to bake something for an hour or more? And now it's like -- EIGHT MINUTES! Wow! But maybe there's something to be said for the 50% thing, it sure works on this enchilada.

I have noticed that recently a lot of frozen foods are using the 50% setting.....it works good so I am not complaining, just enjoying...;)
