Every now and again my preference for cooking from scratch runs smack into my need for quick and easy.  Tonight was a perfect example.  With my daughter eating and sleeping over a friend's house my wife said she could really go for something quick and simple for dinner.

"How about eggs and something?" she suggested.  "Hash Browns", I offered up.  "Perfect", said she.  See?  Simple, really simple.

Perhaps if this was a Sunday morning and I was in the mood for an old fashioned  "cholesterol festival", I might have started these potatoes off fresh.  I do cook some crazy hash browns and sausage when I have a mind to.  But this was a Monday evening following a hectic weekend and the good Mrs. Xeno had bought a couple of bags of Simply Potatoes Hash Browns.

So, instead of taking out the food processor or the old knuckle buster, I simply opened the refrigerated bag of shredded potatoes.  Simply Potatoes are never frozen, simply refrigerated.  Unopened, they'll last about a month in the fridge.  Once opened it's best to have them within 2 to 3 days.  This is never a problem.  A package contains 20 ozs. of shredded potatoes and although the manufacturer claims this is about 7 portions, this could only be true for a family of Lilliputians.  In the real world it feeds 2 to 3 adults at best.

Easy Preparation

A couple of tablespoons of cooking oil in a heated pan and you pour the contents of the bag in tamping it down with a spatula.  After about 7 minutes you drizzle a little oil on top of them, break them up and turn them over until they are golden brown.  A non-stick pan is recommended but I find I get a crispier result using either a cast iron or stainless steel pan.  Preparation couldn't be much simpler.  The resulting hash browns are remarkably fresh tasting and almost impossible to distinguish from "just made".

Season as you like

These Hash Browns are virtually unseasoned, so do with them as you like.  Simply Potatoes also offers a Southwestern Style Hash Brown that has a nice bite to it.  Either will do justice to a couple or three eggs.

My Viewpoint

Sometimes simple is seductive.  When quick and easy is in order, Simply Potatoes offers what you need without sacrificing quality or taste.  Enjoy them.
