Pumpkin Master Deluxe Pumpkin Carving Set — 

It's easy to use and fun, but I wouldn't let anyone under the age of 10 use it without supervision. It's still a bunch of knives! but they can scrape out the guts to occupy themselves. It's a good deal - there are packages for 5 times as much that don't have all the carving implements. And this is easy to find - it's at all the grocery & craft stores. The knives even last until the next year - if you can find them!
