Although it is hard to find in most stores, Peyton's Beef and Pork Chorizo is AMAZING! I won't any chorizo other than Peyton's.  It never has bones or gristle.  It is a dark red color after cooking and has a little bit of spice to it. The spice however can be tamed quite easily with adding eggs or potatoes.  If you see it, get it!!
