Persian Cucumbers —

I love the heat of summer because it is the perfect time to enjoy a fresh salad. My main ingredient in all my salads besides the lettuce are these Persian Cucumbers. I never knew there was such a difference between these cucumbers and regular cucumbers, but there definitely is. I bought a four pack of these cucumbers at Trader Joe's when they were on sale and they have become my favorite produce. The cucumbers are smaller than regular cucumbers, but they have a lot of sweet and tasty flavor. The skin is so soft you actually don't need to peel them and it is not waxy. The cucumbers are seedless and stay fresh as long as other cucumbers. I love using these in salads, but they are also a great refresher in your ice water and a cool snack on a hot day. These are the perfect piece of produce for summer and taste great dipped in rance dressing.
