When it comes to desserts, I'm a guy who likes to stick with the basics.  Apple pie (maybe a la mode, maybe some cheese), but Apple pie usually does it for me.

If you read me often, you know I do enjoy cooking  Whether cooking for myself or for a crowd I so enjoy the sense of accomplishment taking a list of ingredients and turning it into something special.

Having developed most of my cooking skills since becoming "suddenly single" in the late 80's, I focused on entrees, soups, salads and sides.  I have learned to make a killer appetizer or two along the way.

Desserts

No doubt about it.  If there's a void in my mix of culinary skill it's here in desserts.  Hey, it's easy to hide.  Cut up some fresh fruit, whip up some fresh whipped cream and extoll the virtues of the "fresh and simple".

On a few occasions I dusted off a recipe for "old fashioned apple pie" that I guess was my grandmother's.  Know what?  It was sensational!  Know something else?  Baking pies from scratch takes a crazy amount of time. And, on more than one occasion I stabbed myself in the palm with an apple corer.

Mrs. Smith's Deep Dish Apple Pie

Let me start off saying "Mrs. Smith, I love you!"  I don't exactly remember how I came to buy my first Mrs. Smith pie but I'm very glad I did.

This is a pie you can pass off as home made.  I've done just that.

This pie has some heft to it.  A nice thick, moist crust encasing over 4 cups of sweet apples and topped with a nice flaky crust. Just enough of a hint of cinnemon to show you cared.

After roughly 70 minutes in the oven and about a half hour to rest this is a dessert to be savored. With some Breyer's Vanilla Ice Cream or some shaved sharp cheddar you can't miss with this pie.  But make sure you're hungry.  This is a big pie.  It will easily handle 8 -10 good eaters.

Make it your own

To further give your pie an "I just put this together look" I recommend you make interesting cuts in the raw pie top.  When it's through baking you'll have apple oozing out of the cuts but it gives it a great down home look.

My Viewpoint

I've yet to have any difficulty finding Mrs. Smith's Pies in the frozen section of the supermarket.  And, as far as I'm concerned, when Apple Pie perfection is less than 90 minutes away it's hard to pass Mrs. Smith by.  Oh, and did I tell you about her Peach Pie?  Well maybe another time.

A very down-home quality review from our resident chef Rudi Xeno! I bet you could tweek that pie even further if you dared to commit cooking sacrilage. You could add extra ingredients--which would give the pie that too-many-chefs-in-the-kitchen flavor!
