Meijer Roasted Pecans — 

Pecans are one of my favorite nuts and I used to buy a whole bag of them from Sam's Club.  That is, until I found the Meijer brand of Roasted Pecans and bought them on impulse one day.  I'm not a big fan of store brands, so I was a bit wary of purchasing the can.  But heck, I thought to myself, how can they possibly mess up nuts?

I was pleasantly surprised when I first opened the 8.5 ounce can--nestled inside were whole pecans with a dusting of salt on them.  One bite, and I was hooked.  The delicate roasted flavor was apparent in every bite.  These nuts are a big hit with the entire family.  The hubby finds them a bit too salty for his taste.  For me, the salt is right up my alley-- especially once a month when my estrogen levels go crazy and I crave salt and sweets.

I especially enjoy making Pecan Delights:

2-1/4 cups packed brown sugar

1 cup butter, cubed

1 cup light corn syrup

1/8 teaspoon salt

1 can (14 ounces) sweetened condensed milk

1 teaspoon vanilla extract

1-1/2 pounds whole pecans

1 cup (6 ounces) semisweet chocolate chips

1 cup milk chocolate chips

2 tablespoons shortening

In a large saucepan, combine the first four ingredients. Cook over medium heat until all sugar is dissolved. Gradually add milk; mix well. Continue cooking until candy thermometer reads 248° (firm-ball stage).
Remove from the heat; stir in vanilla until blended. Fold in the pecans. Drop by tablespoonfuls onto a greased or parchment lined baking sheet. Chill until firm. Loosen from paper.
Melt chocolate chips and shortening in a microwave-safe bowl or a double boiler. Drizzle over each cluster. Cool. Yield: about 4 dozen. Editor's Note: We recommend that you test your candy thermometer before each use by bringing water to a boil; the thermometer should read 212°. Adjust your recipe temperature up or down based on your test.

Love the review but when I saw the thumbnail pic, I thought they were two tiny mice or bugs. I am crazy. Now I get what they are and would like many please. :)

Oh, for a can of Meijer roasted pecans! We don't have Meijer's down here in Texas. Getting things like these pecans is one of the joys of going back home to the North! Great review!
