Circa Notebooks from Levenger are the best-quality I've found.  The rings are adjustable and you can get bigger or smaller ones.  They are simple and non-pinching to use.  The paper is top-quality.  The layout of the standard notebook pages is excellent for note-taking or for journaling or general writing.  There are several sizes and even different pastel colors now.  The only thing I don't like is that the special "Circa" hole puncher is expensive, but if you get it you can add any pages you like to the notebook.  I particularly like the fact that you can add smaller Circa sizes or index cards interleaved with the main pages of the noteobook.  Excellent product.  Just wish it was recycled paper.
