Great Mashed Potatoes out of a Box?

Yeah I know I hear some moans out there about using a box to make mashed potatoes and if my Dear Mom were still with us she would look at me and laugh at my choice, She made the best Mashed Potatoes I have ever tasted! However when you need to cook in a hurry and your resources are limited you improvise as I have done.

Kroger Instant Mashed Potatoes

These are very simple to make as even I can do it without much effort. My son eats mashed potatoes like they were going out of style so I need a way to make enough for him and do it quickly. I never measure these out, I put some in a bowl until it looks like enough. Then I add my salt, pepper, garlic powder, coffee creamer and butter. Once the tea kettle gives me that sign I add the watter and stir. They come out creamy and good every time! I never worry about making too many as my son will simply take the bowl and finish them off! I am beginning to believe he has a bottomless pit for a stomach....lol No he is not fat either, just a very active healthy 17 year old!

Nutritional Facts

Serving size is 1/3 cup:

Calories 70, Sodium 15mg, Carbohydrates 15g, Protein 2g and Fiber 1g

I had to look twice at the sodium in this as it was so low, but thats what it is!

Bottom Line

Okay so I use flakes to make mashed potatoes, they are still real potatoes just dehydrated and that means they are not going to go bad sitting there and are ready whenever I want to have mashed potatoes. My mother in law claimed she could tell instant from real mashed potatoes, but guess what......She thinks mine are real! For 3 years now when we have family over for a big meal she always raves about my potatoes and I don't have the heart to tell her they come from a box. You see when she comes over I use evaporated milk to make them....I am a sneaky Redneck Cook....lol

I could have used these on Easter...I don't know what I did, but my mashies were not looking right...maybe I beat the **** out of them...just a tad to much :)

Hey I buy the store brand sometimes, too, although I don't go to Kroger much. They are sky high around these parts.
