My husband and I have been doing the South Beach diet for about 3 weeks now. I got a little tired of all the preparing and cooking, so I thought that I would try out some of the South Beach Living frozen meals for those days when I am really busy, or just don't feel like doing the extra cooking. These little frozen meals make for a nice lunch. One of the first ones that I tried was the Chicken Santa Fe Style Rice and Beans. For those of you who are following the diet this meal is for Phase 2 and 3.
The South Beach Living by Kraft is a 9 oz frozen meal can be found in the freezer section. It is a microwave meal that comes in its own microwavable dish.
Preparation of this meal is very easy all you do is remove it from the outer carton, and place it in the microwave. Unlike a lot of these types of meals you do not slit or remove the film just place it directly in the microwave. Microwave it on High for 2 ½ minutes. At this point you pull back the film, and stir the ingredients, then re-cover it and continue cooking for 1 minute, or up to 2 1/2 minutes, depending on your microwave strength. Let cool and eat.
You can also cook it in a conventional oven, just place it on a cookie sheet, on center rack of oven, and then back for 35 minutes at 350. Very carefully remove film and let is set for a couple of minutes before eating.
South Beach Living Chicken Santa Fe Style Rice and Beans is made up of White meat chicken dices, Southwestern Style Brown Rice & Black Beans with a Roasted Pepper & Cilantro Sour cream sauce, topped with reduced fat cheddar cheese.
South Beach Living Chicken Santa Fe Style Rice and Beans provides 340 calories, and 12 grams of fat, saturated fat 4 grams. There are 80 mg of cholesterol, and 750 mg of sodium, which is a lot but about average for this type of meal. There are 35 grams of carbohydrates, which is not that great, but there are 4 grams of fiber. There are 3 grams of sugar, and there are 22 grams of protein.
South Beach Living Chicken Santa Fe Style Rice and Beans provides 50% of the RDA of Vitamin A and C. It also provides 10% Calcium, and 15% Iron.
For those on other diet exchange plans this meal counts for 2 starches, 1 vegetable, 2 lean meats and 1 ½ fats.
The South Beach Living Chicken Santa Fe Style Rice and Beans in my opinion is really tasty. There is a yummy creamy sauce that covers it and mixes in nicely. There is also plenty of chicken, in a lot of frozen meals the meat is really lacking, but you can actually get at least one piece of chicken in every bite. You can also see the little beans scattered throughout. For a frozen diet dinner this really tastes good and satisfying, but it does contain a bit more fat and carbs. That I would like, but this meal is fine to eat occasionally on the South Beach diet.
