I have been to Kauai 8 times over the past 7 years. I love the island of Kauai and the people.
There are lots of things to do on the island, although I think it is a bit more laid back than other islands. I am not one who likes to pack in my days, as I want to relax and enjoy when I am on vacation.
I would suggest that everyone take a helicopter ride to see Waimea Canyon and the Na Pali Coast, it is just amazing and the only way to be able to see it all. The drive up to Waimea Canyon is nice also, but you have to go up all the way to the top and then if it is cloudy, just wait a while for it to clear. I did this and it was the most beautiful view. It didn't last for long, as the clouds came back in, but it was amazing. There are some great beaches, including Polihale, although I am not sure you can really get to this one anymore.
In addition, while you are there check out Lappert's ice cream, the location in Kapaa has the best selection. Also in Kapaa is Beezers, home of great ice cream.
One of my favorite places to eat is The Bull Shed, in Kapaa right on the ocean (you turn toward the ocean at the light where the McDonalds is). The garlic tenderloin is not only very good, but reasonably priced. There is a decent salad bar and the views are very good. This seems to be more of a locals place, but a place that I go to now everytime I am on the island.
If you are looking for a place to stay, I would suggest looking into renting a condo from VRBO.com. There are lots of great places for reasonable rates.
