As you may have guessed by now, Peapod has been having one of their occasional sales promotions for Kashi products.  When you can buy two and get the third one free is a good time to experiment but I must admit that I didn't hold out great hopes for Kashi Black Bean Mango which is vegetarian dish containing a bed of the famous Seven-Grain Pilaf (whole oats, long grain brown rice, rye, hard red winter wheat, triticale, buckwheat and barley) topped with sesame seeds, fruits, vegetables, fruit juices and concentrates.  An ingredient list like that made me wonder if I would like Kashi Black Bean Mango but Kashi deserves kudos for creating that rare bird ... a fruit-based dinner which is delightfully spicy and not too sweet.  In fact, it was so good that I rushed back to the Peapod site and ordered a supply of these things while the sale was still in play.

STATS:

In each package is a single serving which contains 340 calories with 70 calories from fat.  There are eight grams total fat, one gram saturated fat, zero each trans fat and cholesterol, 430 mg. each sodium and potassium, 58 grams total carbs, seven grams dietary fiber, eleven grams sugars, and eight grams protein.  The calorie and carbs count on this vegan entree are surprising, I must admit, and may be a little alarming to those who are strictly dieting but remember that this is a very satisfying dinner which will fend off fatigue and hunger for impulsive snacks for hours ... and wait until you get a load of these vitamins:  150% (D.V.) Vitamin A, 100% Vitamin C, 4% Calcium, and 10% Iron.

TASTE TIP:

Because Kashi Black Bean Mango is after all a fruit-based entree and therefore a tad sweeter than I am used to, I sprinkled a little Kikkoman Reduced Sodium Soy Sauce over it to counteract what I at first perceived to be sweetness.  As I finished the entree, however, I realized that it is really delicious.  Next time, I may scale the soy sauce back a bit.

I'm betting that your stepdaughter (the vegetarian) would like this, Ron!
