Without knowing the reader's pre-conceptions about Kansas, it is hard to know where to start. Flat? I guess. But I've lived in Colorado, Utah, Idaho and Virginia and I thought K-State nesteled in the Flint Hills was beautiful. Square/Backward? Nope. Get over it. Kansas has natural beauty, great people, snobless appeal and great universities.
The Engineering program at KSU is very highly rated and rightly so. The school was the first Land Grant College and has a history as an Ag and Engineering campus. It earned it. The programs in civil, mechanical, agricultural, electrical, industrial, chemical, computer, nuclear and architectual engineering are rigorous and well respected in the industry. Job opportunities are not a problem for K-State engineering grads. We ended up all over the world and I don't recall anyone having problems getting placed.
The price is right. Even with non-resident tuition, you'll save money over other private engineering schools. The campus is beautiful and looks like a college campus should. Native limestone buildings, green quads, beautiful landscaping and well maintained. If you are anywhere near the midwest, take the time to arrange a tour of the campus. You may not end up there, but you can't say it wasn't a great place to visit and you'll understand why K-State alums are so fond of their time there.
