Born and raised in the South, corn bread and corn muffins are a staple.  Corn bread with beans or a side of corn muffins with a bowl of vegetable soup, makes for an easy "happy meal" at my house.  I like to make many things from scratch but Jiffy has it down with their versatile corn muffin mix in a way that I see no need to reinvent the wheel.  Tonight we picked it up at an economical 5 boxes for a $2.00.

Jiffy Corn Muffin Mix Muffins for the Holidays:

I am a holiday nut and I love to involve my kids in the kitchen.  A box of Jiffy Corn Muffin Mix will make 6 typical size muffins or my preference, 12 mini muffins.  We follow the simple directions ( add one egg and 1/3 cup of milk) and a few drops of food coloring to make:

Orange muffins for Halloween or Thanksgiving
Red and Green muffins for Christmas
Pink muffins for Valentine's Day
Green muffins for St. Patrick's Day

Jiffy Corn Muffin Mix (along with one egg, 1/3 cup of milk and one 2 tbsp. of shortening) will also make fabulous pancakes. 

Funny Story:
Before I came 'home" and lived a drive away from my extended family, I would always treat my guests to corn pancakes that were easy to make from Jiffy Corn Muffin Mix.  Everybody loved them and in time, came to expect them.  One morning as they ate their pancakes, someone asked me if I had put banana in them. "No," I replied.  "Oh, they have nuts," another said.  "No they don't," I assured them.  After awhile I couldn't ignore this and I looked for the box.  I had accidentally picked up Jiffy Banana Nut Mix.  Then again, many great things happen by accident, don't they?  I still contend that Jiffy Corn Muffin Mix pancakes are easy and delicious but if you're ready for a change I can attest that Jiffy Banana Nut Muffin Mix makes great pancakes too.

If you are a Southern Living magazine recipe reader, they had a recipe this month for "Chicken and Corn Pies With Corn Bread Crust" that called for a "corn bread mix." I used Jiffy Corn Muffin Mix and it turned out wonderful.  I've since used the same idea to top a black bean and tomato dish with a corn bread topping too.  (Just create your own "base" as you would for a pot pie, prepare Jiffy corn muffin mix according to directions, pour over top and bake on 375 degrees for 30 minutes or until corn bread topping is done.)  Tasty and easy:)

Whether you want muffins, corn bread, pancakes or casseroles style pies,  Jiffy Muffin Mix is easy, priced right and crowd pleasing every time.

Great review! I love Jiffy Muffin Mix and use it often. I'v never made pancakes, though. I'll have to try it. I use Jiffy as part of the dry mix when I fry shrimp or fish. It is very good and adds a nice crunch.

At .33 a box, there is not much that I can't create on a budget with this. the website even gives you more recipes to choose from. Very nice review. BTW the yellow cake mix makes a great shortcut for cobblers.

I don't like cornbread but I love the Jiffy corn muffins--they're sweeter. I love the suggestion for banana nut muffins--I don't eat pancakes and waffles either (don't like syrup). Your suggestions for coloring the muffins reminds me of what an "uncle" used to do for us. He would take the regular yellor or white instant cake mix and add a pack of powdered Kool-Aid to it. Not only did it color the cake batter but it also added a little more flavor. We always loved getting the purple cake slices ;+) It was a treat for me because I won't eat cake if it has frosting on it.
