Turkey is healthy, but who has the time, energy or appetite for a whole bird? Sure. There are solutions. You can buy deli turkey or rubbery turkey roasts in microwave pans. A better solution is to grab a Jennie O turkey breast. You've got the real deal without pulling out all the stops and spending endless hours in the kitchen.
I first bought a Jennie O turkey when I managed to have newspaper lay out with the school on Thanksgiving week. Can you spell bad planning. I knew a traditional turkey dinner was not happening. I hoped to salvage. In the end, I found a new best friend - Jennie O turkey breast.
I stuffed the Jennie O breast in my crock pot. Well, it didn't quite fit. I spent the day working on the computer, cursing and smashing the lid down tighter on the crock pot as the meat cooked down. I later bought a larger oval crock pot, since the turkey breast came out great even in less than ideal circumstances.
Now I often buy a Jennie O turkey breast and put that in the crock pot for a nice dinner that's easy and for leftover turkey sandwiches with real turkey that tastes like real turkey. I either just stick it in and add seasonings, or sometimes I put in a can of turkey broth to make it even moister. Good either way.
The Jennie O breast can be baked in the oven. It looks kind of odd with the shape, but it turns out very good baked too. Broil a bit at the end to get that cripsy skin coating.
If using this for a holiday dinner, cook and then slice. It does not show as well as the full bird on the table. On the other hand, no one here gets all excited about the dark meat. And, picking a turkey carcass for leftover recipes is not much fun.
After our crunch holiday year (which I've had better sense than to repeat), I've continued to go with Jennie O breasts. It's quicker and easier to cook breasts especially using the crock pot. We don't have waste. And, this works out all year and not just for the big meals at the holidays. I used to buy thin sliced turkey, but the home baked (or crock potted) turkey is much better.
