J.A. Henckels Professional S Chef's Knife

A kitchen is not complete without good knives - I guess i could say a kitchen is not started without good knives. Good knives will cost you more than cheap knives but they more than pay for themselves in durability and sharpness and will pay you back over a long lifetime many times.

The J.A. Henckels company is located in Solingen, Germany one of the knife making capitals of the world. Since 1731, J.A. Henckels has produced some world class knives and the brand is still going strong, more than 275 years later. The Zwilling (Twins) stick figure trademark is famous the world over.

Henckels makes various grades of knives with the Professional S series as their top of the line signature model.

The 8" Chef's Knife is the knife used by French Chefs to mince and chop vegetables. The blade is made of one piece of high carbon stainless steel and extends completely through the handle for durability. The blade has a special thickened section called a bolster that blends the handle into the blade and provides a finger guard as well. The steel is sharpened according to Henckels traditional straight taper method that puts the entire weight of the blade behind the edge for superior cutting power. The steel is specially heat treated for toughness and is subjected to a final Friodur cold hardening treatment that gives the blade even more hardness and durability. The black treated wood handle scales are riveted to the tang with three large stainless rivets.

The knife is very useful and cuts hard vegetables with ease. Great for mincing parsley and onions, also. The stainless steel cleans up with a rinse - I don't recommend running fine knives through the dishwasher because of the wooden handles, though. Store it with the edge protected, either in a knife block or a drawer.

I agree George. I own several of their knives. They were indeed pricy, but then again, they've lasted over 2 decades so far. I have no doubt that they'll outlast me. Rudi
