Last year I watched the movie Forks Over Knives and decided to purchase the cookbook. I am in the process of adding more plant based meals into my diet and reduce the consumption of animal based products. This particular cookbook feature veteran chefs Isa Chandra Moskowitz and Del Sroufe just to name a couple. Isa Chandra Moskowitz has published several cookbooks such as Appetite For Reduction which I own and love. Forks Over Knives has well over 300 plant based recipes that range from easy to prepare recipes to more intricate time consuming recipes. The recipes in this cookbook features whole foods and rarely rely on process foods. There are so many recipes throughout this cookbook to choose from such as: strawberry peach smoothie, brown rice breakfast pudding, white bean tomato salad, savory squash soup, black bean and rice wraps, stir-fry noodles with spring vegetables and a long list of desserts just to name a few. This is a wonderful cookbook to own if you are trying to improve your dietary lifestyle. The only thing that I did not like about this cookbook is the excessive amounts of sugar used in the dessert recipes. I feel a lot better since incorporating more fruits, vegetables and beans into my daily diet. I have a lot more energy than I did previously to using this cookbook.

The Greener the Better!

"Forks Over Knives" is a fantastic way for beginners to integrate themselves into a more plant based diet. I've been trying to cut back on the red meat in my diet and this diet was a great jumpstart to working on that. I didn't go completely meat free, despite all the recipes being meat free, but instead tried to incorporate the great recipes with smaller amounts of meat incorporated into it. So the plants and veggies were the focus not the side. It worked fantastically! After about a week a already started feeling better, lighter, and not as tired as I usually feel. A lot of the recipes contain a great deal of ingredients, so you better be the mood for cooking! Some of the recipes I've noticed have a few ingredients that may be difficult to find, or an expensive option you may not exactly be fond of. But I've also realized that they tend to be the more minor ingredients that you can swap out for something that's better known to you. I have a limited knowledge of spices and was unable to get a few different ones, but even given that, the meals still tasted great! Proof that going vegetarian doesn't force you into a life of only salads!
