Do you can?  What do you can?  This year I've made dill pickles; sour cherry jam; cherries; peaches; tomatoes; tomato sauce; salsa; pickled peppers; jalapeno jelly.  What do you like best that you can?  Do you have any recipes to share?

I'm a canner.  I make tons of jams and jellies from fruits I grow every year.  I also can broth, green beans, dill pickles, relish, applesauce, tomatoes, and so much more. 

I have step by step canning directions for some things on my garden blog.

I have always canned.  I love to know exactly where my food has come from.  I also freeze some things and this time of year my food dehydrator runs nonstop!

I can tomatoes, tomatoe sauce  .pickled peppers, pears ,  eggplants  and whatever I find at the farm .

 

My favorite is my eggplant &  hot pepper peppers  mix.....I slice them thin and put them on a large board adding salt over each layer  then place a another board over the top, place a heavy object to weigh it down and let the water out ( I put mine in the fridge and I have a big plastic tray that fits the boards nicely so it doesn`t drip all over ).. leave for  about 12 to 24 hours ...sqeeze out as much water as you can and then put them in a container covered with white vinegar..leave for 24 hours ....squeeze all the vinegar you can and now add some chopped garlic and salt, oregano , oil mix and fill your jars leave 2 inches on top of the jars to add more oil making sure you press down on the eggplant & peppers so the oil stays on top ..... wait at least 2 month to start to eat them . I love them on sandwiches .

That reminds me, I make sauerkraut too - I have a batch fermenting on my counter top right now.  It is so easy to make - and so yummy!

Yes I can!  I can my husband's award winning (2 so far) salsa.  I love canning, esp. in the fall/winter - well, what winter we do have here.  Great topic!

Oh I wish I was a canner!  I've thought seriously about doing it before but I'm afraid I'll do it wrong and poison my family.

I'm not a canner but I made homemade salsa for the first time yesterday.  I'm not too thrilled with the cilantro but it's pretty yummy aside from that.  I'm wondering if anyone has a salsa recipe that they could share with me.  Thanks!

I am sorry to say I am not a canner. When the little thing on top starts to jiggle and make all manner of racket, I still take off and hide. When I was a kid, I thought it was going to blow up and spray green beans all over me. Sadly, I never outgrew it.

Yes, not as much as I would like lately. I do apple sauce, tomatoe juice, salsa, peaches, pears, and sometimes strawberry jam. It is always so good and alot of work. I work full time and only have the weekends. Now that football has started my Thursday & Fridays are filled with football games for high school and Saturdays for the younger son in sixth grade. Fall is football season - too bad it is also the top of canning season as well. I try to grow most of what I can as well.
