Eischen's Bar - Okarche, OK — 

   I will never forget my first adventure to Okarche (OK) from the Yukon area.  My nephew decided that we needed to head to Eischens Bar for lunch.  Not being a drinker, I felt compelled to ask why we would drive so far.  He said very little, but insisted that it would be worth the drive.  Knowing that Eischens bar was listed as historically the first registered bar/tavern in the Oklahoma territory, I found this as great interest.  Especially learning that the original bar burned in the early 1900's, the revitalization of this business is amazing.  Their shrine to the history of Eischens includes a rescued section of the original bar-back that was hand-carved in Italy.

     Six years later, and several adventures to the same spot, I can tell you without a doubt, that Eischens bar has the BEST fried chicken and fried okra I think I have ever, EVER had!  My most recent trip was completed when I had the opportunity to ask one of the staff, just how it was that they fried this chicken to crisp perfection, without it being greasy.  The simple and polite reply was that it is dredged in a dry powdered blend, and fried in the hottest oil appropriate.  The result, I can attest, is shear perfection. 

     Whan your order is ready, it is delivered to your table along with their "finest tableware".  Square waxed paper sheets are laid before you for your plates.  The chicken and akra alike are packed to the brim in large paper trays, along with a tray of sliced white bread, and a tray filled with dill and bread and butter pickles, and sliced onion. 

     Now this sounds like, and is, the simplest of foods, but done right as Eischens does it, it is transformed into an event.  Unfortunately, I have burned my fingers almost every time I go because my anticipation is far greater and less patient than letting the chicken cool enough to comfortably touch.

   You will also find other foods on the limited menu, but I cannot honestly tell you about those items.  I would find it almost a sacrelige to order anything else.  Oh, and beverages...?  Canned sodapop, water, and beer.  After all, it is a bar. ;)
