Sometimes the very essence of genius is simplicity. A big problem with the great ice creams out there (even the low fat versions) has been that the nutritional information given was for a single serving but the manufacturers considered a single serving to be only a quarter of a pint -- a half a cup. If you love ice cream or frozen yogurt and the stuff is of premium quality, it's not easy to stop after eating only half a cup. Now some brilliant person has come up with a better idea -- not only reduce the fats and sugars, but start packing the rich frozen dessert in small, personal-sized (6 oz.) cups. Treat yourself to Edy's Slow Churned Light Ice Cream Cups and BEHOLD! -- finally, you can eat the whole thing without shortening your life span.
These mini-desserts went on sale this week for only $1 a piece at Dominick's and that isn't bad -- the cups are sold individually but if you bought four at $1 a piece, you would end up with a total of 24 oz. premium ice cream for $4. This is a pretty good deal given the pricing structure of frozen ice creams and sorbets today. As of this time, flavors include: Chocolate, Chocolate Chip, Coffee, Mint Chocolate Chip and Vanilla Bean. I chose Chocolate but liked it so much that I may nip back before the sale is over and pick up some more in other flavors. (I have a feeling that the regular price per cup may be a little expensive if not on sale.)
Ingredients include (but are not limited to): skim milk, sugar, cream, cocoa processed with alkali, whey protein and egg yolks. The ice cream is rich and dense in texture and the fact that this ice cream isn't as sweet as some enhances the rich cocoa flavor.

The contents of a whole 6 oz. cup is a single serving containing 170 calories with 50 calories from fat. There are 6 grams Total Fat, 4 grams Saturated Fat, zero Trans Fat, 30 mg. Cholesterol, 50 mg. Sodium, 25 grams Total Carbs, 1 gram Dietary Fiber, 21 grams Sugars, 5 grams Protein and 10% (D.V.) Calcium.
TASTE TIP:
Edy's Slow Churned Light Ice Cream Cups are delicious as they are but they could also be easily popped out into a dish and topped with fresh berries or Smucker's Sugar Free Hot Fudge or Fat Free Caramel Toppings. Chase it down with a cup of your favorite coffee if desired. Purchased on sale for only $1 a piece as I did, they might make a great affordable and easy to eat treat for ice-cream loving children.
