I have always relied on low carb diets to control my weight.  In fact, the entire Xeno clan follows a relatively low carb eating regimen.  Oh sure, we had a mild flirtation with low fat diets a while back, but they weren't very satisfying and believe it or not they wreaked havoc with my tryglyceride and cholesterol levels.

For us, lean meats (well sometimes not so lean), poultry, fish and high fiber vegetables do the trick.  So what's the problem?

The Problem

The problem, simply put is that the Xenos are Pasta Eating Fools!  I mean we really love our pasta.  We love pasta in every shape, length and cooked in any fashion.  Trying to stay true to South Beach or Atkins while maintaining an affair with pasta is a struggle.  We tried switching to whole wheat pastas, and on occasion still eat them.  But aside from the difference in taste and texture, they still have plenty of digestible carbs.  It might not raise your glycemic index quite like semolina pastas but unless you eat whole wheat pasta in very small portions you'll have trouble maintaining your weight.

Therein lies the problem.  Pasta eating fools like to pile it high.  We like to give the Romano cheese something to stick to.  So, what to do?

Dreamfields Pasta

Dreamfields Pasta is Durum Wheat Semolina.  It starts out with the typical 42 grams of carbohydrates as most other pastas.  But Dreamfields adds a fiber blend of inulin, guar gum, xanthan gum and carrageenan that renders only 5 of the 42 grams digestible.  It's a miracle!

But here's the best thing.  It tastes exactly like any other semolina pasta.  It has an identical texture.  So, once you've arrived at a maintenance phase in your diet, you can slather your linguine (or spaghetti, ziti, or elbows) in a nice red, white or olive oil sauce.  Give it a liberal dose of Romano cheese and you're in pasta heaven.

Our favorite is linguine sauteed in olive oil with broccoli and shrimp.  Kind of like a Shrimp Scampi.  That is good eating.

In South Florida Dreamfields Pasta is sold in Publix Supermarkets and in New York it can be found among other places Foodtown Supermarkets.  To get more information on this delightful find and to locate a retail store that carries it you can go to their web-site; www.DreamfieldFoods.com.  It's a little pricier than regular brands of pasta at around $2.49 for 16 ozs., but really, what's an extra buck to us Pasta Eating Fools!
