As someone who's birthday falls on New Year's Eve, I've tried my fair share of sparkling wines.  When I was visiting San Francisco last fall, I decided to spend the day in the wine country.  While at the first stop, I had the great fortune to meet a lovely local couple who were taking friends on a tasting day.  They recommended we visit Domaine Carneros and recommended we taste the Pinot Noir and the Brut.  Taking their advice, we arrived and settled on the gorgeous patio overlooking the vineyards.  We ordered various flights and when the first bubbles began playing with my nose, I knew I had found a new favorite sparkling wine.  With a rich bouquet of citrus, pears, and spice, it's a treat for the palate as well as for the nose.  As our server explained, "The 2004 cuvée is composed of 61% pinot noir, 37% chardonnary and 2% pinot blanc."  The wine has been aged for three years prior to release and will further age gracefully in your cellar (if you can resist opening).
