Crater Lake should definitely be on your list of places to visit! It is also a great camping spot! The lodge for dinner was a little spendy so I'd recommend bringing food and having a picnic. There are trails for a nice little hike. The drive was a little long from Portland so if you are coming from a long distance, it's best to stay at least 2 days. Great views!
