In an effort to get myself off fatty options for sandwich toppings, I decided to give sun-dried pesto a try. Pesto isn't exactly a diet food, but a very small amount goes a long way, and it's much lower in points, on the Weight Watcher system, than mayo. Sun-dried tomatoes are both tasty and healthful - there's even evidence that they can help prevent the body from forming cholesterol deposits in the arteries.
Classico markets this as a pasta sauce, but I keep it in the fridge as a seasoning and sandwich spread. It's got a multitude of uses: a topping for pizza, a great marinade for chicken and fish and veggies, a great base for a salad dressing. It's also great to spead a small amount on toast or an English muffin. My partner loves it when I spread it over boneless chicken breasts, grill them in the oven, and then serve them over a bed of greens with avocado slices and capers. It makes for a really nice dinner that's satisfying and fits within our recent healthier eating patterns.
At about $3, this stuff is a bargain, and I keep it as a staple in our fridge all the time. It keep well in the fridge after opening.
