Chi-Chi's Fiesta Sweet Corn Cake Mix Review

I have always liked the soft sweet corn cake/pudding that is served in Mexican restaurants. It was nice to find that this mix is not only very easy to make, and tastes just like what they serve in any number of restaurants but it is gluten free too! :) I used it at Thanksgiving to make the base for a cornbread stuffing of sorts- it was very moist and flavorful. Dense but everyone liked it anyway.
