The Xenos are carnivores.  Oh, a couple of the elder Xeno daughters toyed  with the vegetarian thing for awhile, but they eventually found their way home. 

Beef, pork, lamb, poultry are all staples of our diet along with an assortment of deep green vegetables and a tuber or two.

The All Important Internal Temperature

No matter how you cook your meat, your results will be affected most by the internal temperature of the finished product.

Like your beef rare?  Well then the center of that steak or roast should be about 140F degrees.  Just 10 more degrees will take you into Medium.  It's all about the temperature inside the meat.  It really doesn't matter if you've turned the outside of your steak or chicken into a blackened ash over an out of control grill.  It's what's going on inside that really matters.

That's where this inexpensive instant thermometer comes in.  All you have to do is to stick the 5" probe to the center of the thickest portion of the meat and within seconds, the temperature will register on the 2" analog dial.  It doesn't get much simpler than this.

The thermometer, constructed of all stainless steel with a tempered glass face is incredibly durable.  No hi-tech look here and not much that needs to be maintained.  Just clean it with soap and water when you're done and throw it back in the drawer.

If you're not experienced with the proper temperatures for various types of meats, you'll find them indicated on the dial.  I might argue that 170F is unnecessarily high for pork (I prefer 155F - 160F) but that's a different matter entirely.

My Viewpoint

Over the years I've tried all kinds of thermometers.  Nothing I've used has served me better or longer than the Acu-Rite Instant Thermometer.  It's widely available in stores an on-line for less than $10.  I highly recommend it.
