Great as a dip.

Campbell's Fiesta Nacho Cheese Soup is another of their "Great for Cooking" soups and works great as a base for casseroles and rice and veggie dishes. While growing up, my sister would use this soup as a dip with tortilla chips, since it was cheaper than buying actual nacho cheese sauce. It does make a great nacho sauce and might be a bit healthier than others. As a side note, I love that Campbell's has the pull tops on most of their soups now. I think the family size cans are the only ones that still require a can opener. Remember to save "Labels for Education" and donate them to your local schools.

I might hate giving away this secret...lol.....but have you tried Campbell's Great for Cooking Soup ***Fiesta Nacho Cheese***? Oh my! It is mmm, mmm, good. I discovered it because of coupons. There was a sale on soup and I had coupons for the Great for Cooking Soups....well I hate Cream of Mushroom...so I look to see what else might be interesting....this Fiesta Nacho Cheese caught my eyes. Let me tell you.... It taste like regular nacho cheese dip...warmed it right out of the can....how much cheaper than nacho cheese dip is it...lol? Especially with a coupon. Last night we added a can of Rotel to it..oh talk about good.....mmm, mmm, good. But the first time I used it I really did make a recipe with it. Or I made up a recipe with it. I cooked chicken, peppers and onions together on the stove top, while cooking white rice. I then added a can of tomatoes ( the tomatoes also had celery, and stuff in it, don't remember now, any will do). I added the tomatoes to the rice before the water was all soaked up. then when the chicken, pepper and onion mixture was done, and the rice and tomato mixture was done I put it all together in the pan I was cooking the chicken together. I added the ***Fiesta Nacho Cheese Soup***, heated it soon, then I pour it into a 9 x 13 casserole dish, topped it with a little mexican cheese I had on hand..you see I was making it up as I went with what looked good to me. I put it in the oven and heated it until it looked bubbly and cheese was melted good. It was fantastic. I have fixed it again since then. This was too much casserole for just the two of us. I used my freezer ziplocks and cut out portions and froze it into individual pieces for  one for lunch meals for hubby's work lunches or for me. Then I have just unzipped the bag and popped it in microwave. I am eager to try other dishes using this*** Fiesta Nacho Cheese Soup***. It is now a staple on my pantry shelf.
