Whenever I do an inside paint job I have used Behr Interior Satin Paint.  I do not think there is such a thing as a paint you only need to apply one coat of, sadly, but with two coats applied properly this paint always looks really nice when you are done.  I have not used any pre-paint layers either, this alone, with a few coats, does the job well.  There are a lot of colors to choose from as well and they match my options perfectly as desired.  The cost is a little high but I think it is a reasonable price - not too high and not too cheap.  There is a reason paint is cheap in price: becaseu it is also cheap in quality.  Behr is great quality paint and lasts a long time!  The particular paint colors I have used were a dark green, and their selections of white and off white have also come out looking fantastic in my kitchen area.  I have repainted twice so far now due to needing to repair walls and holes etc. but the paint still looks great: no chipping, peeling, fading or anything else like that.  Whether it is the satin model or not I recommend taking a look at the Behr paint options and prices at your local home store when you are doing a paint project.
