On a recent shopping trip I bought some more Aqua Star seafood, this time I grabbed their Sole Fillets in a 12oz. package in the frozen section of the Dillon's. Like the Aqua Star Catfish Fillets these were separately packaged in 2 vacuum sealed bags.

Aqua Star Sole Fillets Wild Caught

I opened the package and thawed one of the vacuum bags in cold water while I prepared the veggies from my garden. I just got my first Japanese Eggplant and Banana Peppers from my garden and was anxious to fix some fresh veggies. I sliced both longways and fried them in about a tablespoon of butter on my griddle and seasoned with a bit of garlic powder and pepper. Halfway through I tossed the Aqua Star Sole along side the veggies and the were done all at the same time.

The Sole was delicious along side the fresh eggplant and banana pepper and although not fresh was very tasty indeed. My first garden veggies were excellent and very tender, I am glad I grow my own now!

I washed it down with an ice cold glass of Country Time Pink Lemonade...Yummy!

Nutritional Facts

1 serving is 4oz of Sole (3 servings per package)

Calories 100, Fat 1.5g (0 Trans Fat) Cholesterol 55mg, Sodium 90mg, Protein 21g and NO Carbs. Also it has Calcium 2% DV, Vitamin C 4% DV and Iron 2% DV

Bottom Line

Fish and fresh veggies is always a good meal, especially when you grow those veggies yourself. Aqua Star added to the great meal I had with their great Sole Fillets which are Wild Caught and not Farm Raised. I knocked off 1 star because the package contains 3 servings but they package it in 2 bags which makes it hard to separate the 3 servings, you see I am the only fish eater in the house. Otherwise the would be a 5 star to me but since I don't waste anything (if I can avoid it) I ate 1 1/2 servings.

Oh yes.......before I left Kansas I fixed a mess of fresh green beans, they were great!!! I also got enough off the first picking to freeze about 4 more dinners worth...my tomatoes are not ready yet but I got peppers and eggplant out of it already. Can't wait to get some fresh corn and watermelons!!! ;)

Boy, I bet you're glad you have a veggie garden now, especially with all this salmonella scare going on here and there! Even though I know it's a lot of work, there are nothing like veggies from the garden.

Too bad I wasn't there -- we would have finished off that great fish in a flash. "Yah, he's a SOLE man!"
