As a vegetarian, I have fallen in love with Amy's products and this Amy's Enchilada with Black Beans and Vegetables is one of my favorites.  Each enchilada is a great mix of vegetables, tofu and beans with a lot of spice in a tortilla.  I like that this enchilada is very flavorful and still only 180 calories.  These meals are microwavable and are made in minutes.  The best part is that the tortilla stays firm and doesn't get soggy with the filling.  I like that they are very filling and make a great veggie lunch when paired with some fruit or a salad.

I found Amy's frozen meals because I had to switch to the gluten free lifestyle for medical reasons. I was very distraught because I had no idea what I was going to eat. I found Amy's products at The New Pioneer Coop in Iowa City and had seen them at local groceries stores. The products are a tad pricy, but being gluten free I have found that to be the norm. I guess it does cost them more to produce items in a separate gluten free facility too, but still seems pricy for one meal.

          Amy produces the best frozen enchiladas I have ever tasted. Cruelty free,  but teeming with flavor I crave these a few times a month. The surprising thing is that my boyfriend and grandfather love them too. My granddad actually rubs his finger on the plate to get every drop of sauce. Next to going to a vegetarian friendly, gluten free, authentic Mexican restaurant. I have only had better enchiladas, once in my life. It was at a Southwestern restaurant in Sedona Arizona. I picked up Amy's Enchiladas Black Bean and Vegetable from my campus convenience store. I have tried the enchildada meal by Amy's but I saw this one day and thought I would try it. It was wonderful. I love enchiladas but non-dairy pre-made ones are almost nonexistant. I've tried some from Trader Joes which I was satisfied with, but I was glad to know there was some I could buy near my college campus. Although I still enjoy the meal better, these are still delicious. They are healthy, quick, and mainly organic.
