Alessi Coarse Kosher Sea Salt — 

Is there non-kosher salt?
Don't ponder this question for too long.  Kosher salt gets its name not because it's Kosher, but because this coarse salt is used in the Koshering process of meats.

The Choice of Chefs (and Bartenders)
If you watch cooking shows, you'll often hear or notice the chef seasoning a dish with Kosher salt.  Why?  Because Kosher salt is coarse, less refined, irregular in shape and therefore adheres better.  Also, its coarseness makes it easier to handle when seasoning by hand.

Bartenders like it as well since it adheres well to the rim of a glass (as in a "Margarita, straight up with salt").

But why Alessi?
Alessi is made of nothing more than sun evaporated sea water.  It has a mild but deep salt taste.  Unlike table salts which of course are finer, there are no iodides added.  Don't get me wrong, iodides are needed in your diet, but when it comes to cooking they can interfere with the flavors the salt is intended to impart.  Leave the iodides to the table salt.

My Viewpoint
When you find a name you can trust, you stick with it.  Alessi produces a nice consistent product produced from Mediterranean sea water.  Its price is within a few pennies of any other Kosher salt.  From the Xeno kitchen on this fine Thanksgiving morning, I highly recommend this product.
