30-Minute Meals with Rachael Ray — 

 Working full time and cooking out of necessity, it is often difficult to create new and exciting meals that not only are easy and quick to prepare, but also tasty and can fit into my budget.  After watching Rachel Ray's 30 minute meals for the first time, I thought, wow, this can be done with a little organization and planning.  I was just so glad to see someone who cooks like me.  She doesn't make the hoity- toity fancy foods that won't fill you up. She doesn't even really measure.  She cooks regular things like you and I and she does it in under thirty minutes. 

 Not only does Rachel make meals that we eat like pasta dishes, burgers and salads, she even makes nice desserts and sometimes cocktails.  All within the same thirty minutes.  What I like best is that she offers variations on the dishes she makes.  She suggests healthy alternatives as well as fun additions for the kids.  She even says we can add this instead of that.  Many times I have prepared one of her recipes adding my own special touches and my family ate it up, literally.  I've even altered my shopping method in order to have certain things on hand at all times so if need be, I can prepare a thirty minute meal on any given day. 

 I have never purchased one of her cookbooks, but, I have watched many episodes of her show. I usually watch Thirty Minute Meals on weekends on the Food Network Channel. I enjoy each one and they all give me ideas for meals for my family.  My daughter even watches now and likes the show.  The only thing we don't like is that the new set is too dark.

 Rachel Ray is a ray of sunshine for us cooks who don't have the time nor ingredients for making expensive, long, drawn out meals.  She uses things that are already in our pantries and refrigerators to make simple tasty meals that the whole family will eat and love.  I recommend the show to all who have to cook and have only limited time to do it. You may learn something.
